Vegetables, More than Ever
When I was kid, I think my main vegetables were lettuce (iceberg of course!), carrots and green beans. I’d say corn, but I’ve learned in the last couple years that corn isn’t actually a vegetable, but a grain. But oh, how times have changed. Each day, I’m eating 7+ servings of fruits and vegetables, many of which I never even tried until the last 5 years or so. Today for example, I consumed:
watermelon, nectarines, blueberries, banana, asparagus, cherry tomatoes, green onions, red onions, spinach, vine ripe tomatoes, zucchini, artichoke hearts, romaine. That’s a lot of produce!
Someone asked me today if I thought it was possible to teach yourself to like something. While I can honestly say that I don’t recall ever really hating vegetables, I sure as hell didn’t eat them as much as I do now. But a funny thing has happened over the last few years, now, I often times crave fruits and vegetables. Not a morning goes by lately where I don’t want watermelon. I always want blueberries. Rarely does a day go by where I don’t eat salad. And artichokes? Love them!
I’ve come to the realization that food is an adventure, and I’m happy to eat my way though life.
